Clams on Fettuccini
2 lbs live clams
3 strips double smoked bacon
1 clove garlic
1 bunch parsley
½ cup dry wine
1 lb fresh fettuccini
Finely
chop bacon and sautee in a large saucepan until cooked. Add
minced garlic clove for 1 minute and then add wine. Bring to
a boil and add the clams and parsley. Stir thourghly. Place
the lid on the saucepan and cook until all the clams open. About
4 minutes.
Serve on
top of cooked fettuccini with fresh parmagean and black pepper.
